How & When to Harvest Squash and Pepper Seeds

    • 1). Leave squash and peppers on the plant until they are fully ripe. For successful replanting, seeds must be fully mature when harvested.

    • 2). Cut open the squash and pepper plants lengthwise using a sharp knife. Scoop out the seeds and lay them on separate paper towels.

    • 3). Remove all fleshy material from around the seeds. Rinse squash seeds to clean off all the remaining fruit flesh.

    • 4). Spread the seeds out on a drying screen in a dry area. Check the seeds every few days. Bend the seeds; if they break in half, they are dry and ready for storage.

    • 5). Place the seeds in glass jars. Fit the jars with a lid and label each jar. Store in a cool, dark place until spring planting time or until the seeds are required in the kitchen.
