Cranberry-Ginger Relish Recipe

Here's a cranberry relish with a twist, crystallized ginger. The ginger gives a nice zing to cranberries and also adds an interesting textural difference. This cranberry-ginger relish makes a great side dish for turkey or pork, goes well with a nice cheddar, and also makes a wonderful condiment for a turkey sandwich or burger.

Ingredients
  • 1 12-ounce bag of fresh or frozen cranberries, rinsed and any stems removed
  • 1 orange
  • 1/3 cup crystallized ginger
  • 1/4 to 1/2 cup sugar
  • 1/4 teaspoon salt

Preparation
Zest the orange. Use a zester or remove the zest with a vegetable peeler (try not to get the bitter white part) and mince with a knife. Remove the rest of the orange peel and discard, saving the segments for step 2. Remove any seeds.
To a food processor; add the cranberries, orange zest, orange segments, ginger, 1/4 cup of sugar, and salt. Process the mixture with short pulses until well combined but still slightly chunky.

Taste and add more sugar if too bitter. If the relish is too thick, add a bit of freshly squeezed orange juice.

Cover and refrigerate until ready to serve.
