How do I Can Cukes With Red Wine Vinegar & Brown Sugar?

    • 1). Coarsely chop all the vegetables after washing them thoroughly. Place them in a big steel or plastic bowl. Add the kosher salt and mix it well so all the vegetables are coated.

    • 2). Cover the pot with a kitchen towel. Leave the mixture to sit for 12 hours.

    • 3). Pour out the excess liquid that has collected at the bottom of the pot.

    • 4). Add the red wine vinegar, brown sugar and spices to a large pot and place it on the stove on high heat. When the mixture starts to boil, turn it down to a simmer and stir until the brown sugar has dissolved. Add the vegetables and bring the mixture back up to a boil. Let the vegetables boil for 15 minutes, or until tender.

    • 5). Put the mixture into sterilized canning jars, leaving 1/4 inch of space at the top. Seal the jars.

    • 6). Boil the jars in a water bath for 10 minutes, to complete the canning process. Store until use.
