You can create Easter cupcakes by decorating simple frosted cupcakes with assorted Easter candies, but if you want to make a tray of cupcakes really stand out at your Easter party, you'll need to think of something a little more impressive. Luckily, you don't need to be a cake decorating professional or have a large supply of tools available. Even novice decorators can make creative Easter cupcakes with a small investment of time and the use of store-bought candies to help round out their designs. - Surprise your guests with Easter egg-shaped cupcakes that have colorful marshmallow chicks hidden inside them. Use refillable plastic Easter eggs to create the egg-shaped shells for the top of each cupcake. Coat the inside of half of a plastic egg with non-stick cooking spray or vegetable oil to prevent the candy from sticking to the egg. Melt candy wafers in the microwave until they are smooth and liquid, and use a clean paintbrush to cover the inside of the egg with a layer of candy. Store the eggs in the refrigerator until the candy is cool and hard, then gently pop it out of the plastic egg. Assemble your cupcakes by frosting them with any color of icing and placing a marshmallow chick in the center of each cupcake. Arrange the candy egg shell carefully over the chick. Serve the cupcakes intact, or break a few of the candy eggshells to expose the chicks and create the appearance of hatching baby chicks on your cupcake tray.
- Top your Easter cupcakes with soft and fluffy lambs made of marshmallows. You can frost your cupcakes white to match the lamb or use the tinted icing of your choice. You can also tint shredded coconut green with a few drops of food coloring and press it onto the frosted cupcake to simulate grass. Place a large marshmallow on the center of the cupcake to form the body of your lamb. Spread icing carefully over the marshmallow and then press miniature marshmallows onto it to create the lamb's coat. Once the marshmallow is covered, you can use additional icing to attach pink jelly beans to the top of the lamb to create ears and round candies to the front of the lamb to create eyes and a nose. Place four purple or black jelly beans on the cupcake right next to the lamb to create its hooves.
- Add a creative spin to standard Easter bunny cupcakes by creating a carrot-covered cupcake to keep the bunny happy throughout your Easter celebration. Use candy corn as carrots and add green icing to the wide end of each candy corn to mimic the carrot's green leaves. Cover your cupcakes with green icing and sprinkle the carrots on top before you nestle a small chocolate or marshmallow Easter bunny onto the center of the cupcake. The Wilton website recommends forming a bunny from cookie dough and perching the baked cookie onto the edge of the cupcake as if the bunny is peeking out of a basket of carrots. You can use edible markers to draw the bunny's face onto the cooled cookie to add even more detail to your cupcakes.
