    Cheddar-Jalapeño Quesadilla Salad with Cilantro-Lime Vinaigrette

    • This spicy salad is a creative vegetarian entree. First, fry up a quesadilla by filling a soft tortilla with black beans, corn, jalapenos and sharp cheddar cheese. Slice the quesadilla and line a plate with it. Toss lettuce, tomato, salsa, onion and a dollop of sour cream on the plate. Make the tangy dressing for this salad by mixing 1/4 a cup of Dijon lemon vinaigrette with 1 tbsp. of cilantro and 1 tbsp. of lime juice. Drizzle the vinaigrette over the salad and enjoy.

    Quesadilla Explosion Salad

    • This salad is inspired by Chili's restaurant. First, make the salsa by combining roasted corn, black beans, red and jalapeno pepper, onion, lime juice, salt and cilantro. Next make a chipotle ranch dressing by combining one packet of ranch dressing mix, 1 cup of 2 percent milk, 1 cup of Greek yogurt and 1 tbsp. of chipotle peppers in adobo sauce. You can make the citrus balsamic dressing by simmering 1/4 a cup of orange juice, 2 tbsp. of balsamic vinegar and a pinch of sweetener, orange zest and nutmeg. Thinly slice and bake sweet potato strips at 350 degrees for 20 minutes. Fry up a quesadilla by filling a soft tortilla with Colby jack cheese. Cook a chicken breast or a veggie "chicken" breast and slice thinly.

      Line your plate with quesadilla slices. Place a generous amount of salad leaves on top. Add your chicken strips and potato slices. Top these with the salsa you made. Drizzle both dressings you made over the salad and enjoy.

    The Quesadilla Pita

    • This simple sandwich is part panini and part quesadilla. To make the quesadilla pita, dollop 2 to 3 spoonfuls of mayonnaise in a bowl and add a spoonful of Dijon mustard. Mix in a dash of hot sauce for spice. Tear up a couple thin slices of ham, and add sliced cherry tomatoes and shredded cheddar cheese to the mix. In another bowl, pour in some olive oil and a couple shakes of pepper. Coat your pita in this. Slice open your pita and spoon in your filling mixture. Grill your pita in a panini press and enjoy your sandwich.

    Pita Quesadilla with Cilantro Hummus

    • The pita quesadilla with cilantro hummus combines Mexican cheese and spice with Mediterranean tang. To make this sandwich, first make the hummus by combining 1/2 a cup of chopped cilantro, 2 cloves of minced garlic, one 15 oz. can of rinsed and drained chick peas, two tbsp. of lime juice and 2 tbsp. of olive oil in a food processor. Blend until the mixture is smooth. Cut four pitas in half and put four halves on a foil-lined baking sheet. Spread hummus on the halves and top them off with sliced red peppers and baby spinach leaves. Next top the pitas with their other halves and bake them at 350 degrees for 10 to 15 minutes.
