This Beet and Carrot Quick Bread recipe is from Aunt Nellie's Glass Vegetables. Using jarred beets makes this a lot easier, but you do have to grate the carrots. It's well worth the effort, however, to end up with this moist loaf that would be perfect as an edible gift for the holidays. It can be baked in four (5x3-inch) loaf pans or one (9x5-inch) loaf pan.
