How to make a Creamy Flan
- 1). Preheat the oven to 350 degrees Fahrenheit. In the blender combine condensed milk, evaporated milk, cream cheese, eggs and vanilla. Blend on medium speed until thoroughly mixed.
- 2). Pour the sugar into the cake pan. Place the pan on the stove on medium heat. Grab two pot holders and gently shake the pan back and forth as the sugar begins to melt and turn light brown. This motion ensures that the sugar melts evenly. Do not stir. Once the sugar is caramelized, remove the pan from the stove and place it on a wire rack.
- 3). Carefully pour the contents of the blender over the caramelized sugar. Place the pan in the oven and bake for one hour.
- 4). Remove the pan from the oven and cool on a wire rack for 30 minutes. Place a large round serving dish over the top of the pan and invert the pan so the flan gently falls onto the platter. It the flan doesn't fall out immediately, allow the pan to remain inverted on the platter until the flan drops onto the platter.
- 5). Cover the flan and refrigerate it for several hours before serving. Flan thickens and becomes creamier as it cools. Slice and serve.
