Unexpected Fiesta Recipes

In case you were unaware, Mexican fiesta parties are the best, that happy day when we chow down on tortilla chips, salsa and other Mexican and Tex-Mex favorites.  For your next fiesta, instead of choosing typical Mexican-style fare, spice it up by adding unique twists to Mexican-style recipe favorites. Here are two recipes that are sure to get folks talking at your next fiesta.

Bizarro Guacamole

A garlic guacamole recipe with tofu and curry powder? This recipe for guacamole dip may have an unusual ingredient list, but its flavor cannot be beat. Learn how how to make fresh guacamole that turns heads with this recipe.

Ingredients
  • 1 ripe avocado
  • 1/8 pound tofu, firm style
  • 6 large cloves of garlic
  • 1/2 medium bell pepper
  • 2 green onions
  • 2 tablespoons parsley, freshly chopped
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon thyme
  • 1/4 teaspoon black pepper, freshly ground
  • 4 tablespoons hot sauce
  • Juice of 1/2 lemon or lime

Instructions
  1. Mash avocado and tofu in bowl.
  2. Squeeze garlic through press and add to avocado mixture.
  3. Finely chop bell pepper and green onion and stir in.
  4. Add herbs and spices. Mix well.
  5. Add hot sauce. Stir in lime juice.
  6. Eat with tortilla chips.

Note: This guacamole recipe can be refrigerated, but do not make more than a few hours in advance.

Strawberry-Peach Salsa Dip

Salsa is probably the healthiest dip you can find, especially if you fill it with fresh fruits and vegetables. This Strawberry-Peach Salsa Dip is great for crackers or veggies, and you can even use it as a sauce for grilled fish or chicken.

Serves: 2

Preparation Time: 15 Minutes

Ingredients
  • 1 cup peaches, diced (about 2 peaches)
  • 1/4 cup strawberries, diced
  • 1/2 medium green pepper, diced
  • 1 medium onion, diced
  • 2 tablespoons raisins
  • 3 tablespoons parsley, chopped
  • 3 milliliters wine vinegar
  • 2 tablespoons extra-virgin olive oil
  • 2 milliliters sugar
  • 1/2 salt
  • l tsp dry mustard
  • 1 teaspoon thyme
  • 1/4 teaspoon cinnamon
  • 1 teaspoon rosemary

Instructions
  1. Combine the diced peaches, strawberries, green pepper, onion, raisins, and parsley. Toss together.
  2. Add the sugar, salt, mustard, thyme, cinnamon, and rosemary. Toss with the mixed fruit.
  3. Stir in the wine vinegar and olive oil. Refrigerate for at least 2 hours before using for the flavors to blend. Serve with chicken or seafood. Also good with pork.
