Easy Vanilla Butter Cookies with Almonds

These simple little butter cookies are shaped and topped with almonds before baking. This is a very easy cookie to prepare and bake, and they have a wonderful buttery vanilla flavor.
They are very much like buttery shortbread in flavor and texture.

Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 1/2 teaspoons vanilla extract
- 2 cups all-purpose flour, spoon and sweep, 9 ounces
- dash salt
- 1 teaspoon baking powder
- blanched almond halves or whole almonds
- Prep Time: 7 minutes
- Cook Time: 20 minutes
- Total Time: 27 minutes
- Yield: Makes About 4 Dozen
Preparation
Heat the oven to 300° F.
Using an electric mixer, cream butter and sugar until light and fluffy. Add vanilla and blend well.
Sift together flour, salt, and baking powder. Stir the sifted dry ingredients into the creamed butter mixture; mixing until well blended.
Shape dough into small balls about 1 inch in diameter. Place them on ungreased cookie sheets. Gently press an almond half or whole almond into the top of each ball.
Bake for 20 minutes, or until just lightly browned on bottoms.
Makes about 4 dozen cookies.
