- 1). Harvest allspice berries when they reach their full size but are still green. Break off small branches bearing clusters of berries.
- 2). Gather the branches with the berries attached. Store in a pile to prepare for berry picking.
- 3). Handpick allspice berries from their stems. Remove all the leaves from the branches.
- 4). Spread the berries on a drying surface called a barbecue. Dry allspice berries for two weeks in the sun. Or dry in an oven to ensure that berries do not become too moist while drying outdoors, recommends the Herbs2000 website.
