Steak
Make a marinade of olive oil, vinegar and steak spice. Place steaks in marinade and marinate in fridge for at least four hours. Cook steaks on medium-high heat to an internal temperature of 145 degrees Fahrenheit for medium-rare and 160 degrees Fahrenheit for medium, or about 5 minutes per side for each inch of thickness. Rotate steak once at 45-degree angle, then turn it over and cook the other side. Test for doneness by pressing the steak with your index finger. The tighter it feels the more done it is. Cover the steak lightly with foil after cooking to retain heat.
Grilled Summer Vegetables
In small bowl, mix together olive oil, soy sauce, lemon juice and minced garlic. Choose vegetables such as zucchini, yellow bell pepper, red onions, mushrooms and tomatoes. Cut vegetables in slices and place in marinade in fridge for about a half-hour. Remove vegetables from marinade and place on preheated grill for about 12 to 15 minutes or until tender.
Garlic Bread
Peel and finely mince garlic and add it to butter. Cut a French baguette at half-inch intervals, ensuring that you do not cut through it completely. Place garlic butter into each cut in the bread. Wrap the entire loaf in foil and place on grill on medium heat for about 15 to 20 minutes, rotating every few minutes.
Fruit Kabobs
Certain fruits such as fresh pineapple, whole strawberries, peaches or sliced bananas are ideal for grilling. Cut the pineapple, bananas and peaches into uniform-sized chunks and add whole strawberries. Insert fruit onto skewers. Grill just until fruit is caramelized and brown on the outside. Remove fruit from skewers and serve fruit by itself or with ice cream to create the perfect light dessert.
