Video: Sugar-Free Broccoli Salad

Hi, my name is Chris Antes, a personal chef with Thechefforyoutohave.com, and I'm here in the Conscious Cook's Kitchen and today I'd like to prepare for you a sugar-free broccoli salad. Now one thing I like to do is of course with salads, it's good to have a little bit of sweetness but instead of adding any kind of refined sugar or anything like that we're just going to use some natural fruit that will really help with that flavoring. So, to start off with this salad, first thing I've got a little bit of some spinach in here in the bowl and I'm going to add some broccoli first and now with this broccoli, I gave it a quick blanch. I steamed it until it got just tender. I mean I really like some raw broccoli as well but I know it kind of appeals more to people if it is a little bit cooked and now this way it just has a little bite to it and it brightens up the color and makes it a lot more nice and green. So, we'll add just a little more of our broccoli to that. We'll also add a little bit of cauliflower, okay and then I've got some things cut up here to add. Well first something that you don't find often that we are really fortunate around here in California because you'll only get these usually in a little jar but these are mandarin oranges, again grown here in San Diego. We're going to put that in there which that will give it its sweetness. Same with carrots. Carrots are really good and sweet. They're adding something nice to it. I'm going to add some cucumber, some celery. We've got some scallions here if you like to call them green onion, a little bit of some radish. I've got some red and green peppers here and some tomato and then I also like to add a little bit of some walnuts to it to give it some good crunch and then to sweeten it, then we're also going to add something else that we benefit from here in California is a blood orange which has this beautiful red color and again this is a perfect way to just give it a little flavor and not be adding sugar or any kind of oil to it, just imparting wonderful flavor from each of the fruits and vegetables in there and then the wonderful little benefit that we get from that blood orange to just give it that extra little bit of flavor. So we'll just toss it around get everything a little distributed. And then there you go, you have a wonderful sugar-free broccoli salad ready to go.
