How to Substitute Unbleached White Flour for Wheat Flour

    • 1). Measure out 1 cup plus around 2 tbsp. of all-purpose flour for every cup of whole wheat flour in your recipe. For example, if your recipe calls for 1 1/2 cups of whole wheat flour, use 1 1/2 cups plus 3 tbsp. of unbleached all-purpose flour.

    • 2). Reduce the amount of baking powder in the recipe by half. If your recipe calls for 3 tsp. of baking powder, reduce this to 1 1/2 tsp.

    • 3). Make your recipe as you normally would, using the adjusted amounts of all-purpose flour and baking powder. Recipes that call for whole wheat flour usually include slightly more liquid to compensate for this type of flour, so you can reduce the liquid slightly if you wish to avoid sogginess in the finished product.
