Sweet Potato Ravioli With Brown Butter Pecan Sauce
Ingredients
- 1 cup fine soft bread crumbs
- 1 teaspoon dried leaf oregano
- 16 ounces cheese-filled ravioli, cooked and drained
- 2 tablespoons extra virgin olive oil
- nonstick cooking spray
- 1 cup prepared spaghetti sauce or marinara, warmed
- Prep Time: 10 minutes
- Cook Time: 10 minutes
- Total Time: 20 minutes
- Yield: 12 Appetizer Servings
Preparation
Preheat the oven to 450°. Coat 2 baking sheets with nonstick spray or use nonstick mats or foil to line baking sheets.
Toss the drained ravioli with olive oil.
In a pie plate or wide shallow bowl, combine the bread crumbs and oregano. Roll each hot ravioli in the crumb mixture until coated. Place the ravioli, 1-inch apart, on prepared baking sheets. Spray lightly with the nonstick cooking spray.
Bake 1 sheet of the ravioli until lightly browned, about 5 minutes, then bake the second sheet.
Serve with the spaghetti sauce for dipping.
Serves 12 as an appetizer.
