- 1). Combine the lemon juice, melted butter or margarine, fresh parsley, olive oil, salt and pepper in a food processor. Pulse the food processor in five-second increments to blend the snapper seasonings.
- 2). Pour the contents of the food processor into a plastic sandwich bag. Add the snapper fillets to the bag, press all the air out and seal.
- 3). Shake the bag lightly to coat the fillets in the seasonings and place into the refrigerator for 12 to 24 hours. The longer you leave the red snapper in the refrigerator, the more intense their flavor will be.
- 4). Remove the snapper from the bag and place directly onto a prepared baking pan, skillet or grill to cook. Discard the marinade and sandwich bag.
