A Healthy Alternative To Regular Pizza
Pizza does not always have to be laden with three different kinds of cheese or with toppings that are high in fat and calories.
Fortunately, there are plenty of simple ways to make healthy alternatives everyone will still find to be satisfying and delicious such as our grilled squash pizza that is rather easy to make using one butternut squash, some yellow onions, and a few low fat cheeses.
Grilled Butternut Squash Pizza Recipe What You Need
Prick the rinds of the squash a few times with a fork.
Place the 2 halves of the squash with the cut side facing down in a microwave safe dish with about a 1/4 inch of water.
Microwave on high for about 10 minutes or until the squash is soft.
Alternatively, to soften the squash in the oven, preheat to 350 degrees Fahrenheit and then bake cut side facing down on a baking sheet for about 45 minutes or until soft.
After cooling, scoop out the flesh and add to a mixing bowl along with the nutmeg, salt, and pepper and mix well.
In a skillet, heat 1 tablespoon of olive oil over medium heat then saute the sliced onions until they start to turn light brown.
In another bowl, combine the cheeses and set the cheeses and cooked onions aside.
To make the pizza crusts combine the molasses with the package of yeast and the lukewarm water and stir well.
Allow to sit for about 5 minutes or until the mixture becomes bubbly.
Add the salt and oil and stir.

Lightly flour a baking sheet and flatten the balls of dough into circles of about 8 inches in diameter.
Gently remove the dough from the baking sheet and grill for about 1 minute or until the dough begins to puff up and become stiff on the underside.
Flip after 1 minute and place the pizzas on the uppermost rack of the grill.
Spread 1/8 of the cheese over each miniature pizza and top with onions and squash.
Sprinkle with parsley and rotate each pizza a few times to prevent burning while the cheese is melting.
