You can never have too many cutting boards and I wouldn't even want to count the ones in my cupboards. I also love a variety of boards from soft to hard plastic, as well as wooden, big or small - they are all very practical for different cutting/chopping tasks.
Architec's Ribbit Flex™ Cutting Board looks very intriguing because you can scoop the cut foods and that can add another level of convenience to a board.
So I was anxious to test it.

How the Flex Cutting Worked

The Flex™ cutting board certainly has looks going for it. I love the style, color and concept of the scooping feature, which works very well. The 8" x 9" model reviewed is a very practical size for small cutting tasks.
This style of cutting board however, allows cutting/chopping only on one side and cannot be stored flat with other boards. As for the hard cutting surface, you can easily cut on it and I also found it ideal for cutting/serving a sandwich. The scoop saves food prep time.
Unfortunately there is a downside to the Flex cutting board.
It is rigid with a seamed fold and it doesn't lay flat enough on the counter to remain stable, so it moves while you are cutting food. One side can lay flat, not the whole board. This is most unfortunate.
The seam may soften with use allowing the board to lay flat as it should, but after several chopping tasks, it still is a problem. I'm very surprised there isn't some non-slip material on the underside, since you cannot use that side to cut anyway.
Overall Impression
I do like look of this board and the concept of the cut-and-scoop design, but unfortunately the Flex™Cutting Board's inability to lay totally flat and still while cutting, is definitely a drawback to the design and a safety concern. The plastic of the finger holes could also be a little smoother for comfort.
I'd love to see this remedied by the manufacturer, because it's a neat and practical design. Architec makes a wide range of cutting boards; you might want to check those out.
