Piping gel is a product used in cake decorating to give dimension and sometimes color to cakes. The clear gel can be mixed with other colors or jams for pie toppings and colored gel can be used for wet-look designs. Wilton piping gel comes in many convenient sizes, from large tubs to handy tubes that can be piped directly onto cakes. - Wilton piping gel comes in many different colors in individual piping tubes. They are great for writing quick messages and names, letters or numbers on cakes. These are also handy for creating centers on flowers piped in cake frosting. Since the piping gel is transparent and see-through, be sure the underlying frosting is of a complementary color hue or the resulting color may not be as desired. For example, a yellow piping gel that is piped onto a blue cake will result in green-colored piping.
- Piping gel can be effectively used as a cake topping providing it is mixed with a tasty garnish. Wilton clear piping gel mixed with drained, canned dark sweet cherries makes a nice topping for a chocolate cake with a cherry filling. When using piping gel in this fashion, pipe a border around the edge to keep the piping gel topping in place. Wilton clear piping gel can also be used brushed on fresh fruit tarts to give a fresh, wet look to the fruit before serving.
- Wilton Sparkle Gel comes in individual tubes and can give last minute sparkle to cakes and cookies. The bright colors can accentuate flowers and piped figurines. Use the sparkle gel when writing inscriptions on the top of the cake for a dramatic and fun look for any occasion cake.
