  • Total Time: 23 minutes
  • Yield: Serves 4 to 6

Preparation
Wash and pat dry the pork loin roast. Place in a baking pan or on a plate. Mix together all other ingredients with a mortar and pestle or in a small bowl using a wooden spoon handle to grind. Rub mixture all over the pork, covering it completely. Using good quality cotton kitchen twine that has been soaked in water for at least 5 minutes, tie the pork loin in four places to make a neat roast. Cook on medium coals with lid on, turning once, until the internal temperature reaches 160 degrees F/70 degrees C.
