- 1). Spread fresh herbs in a single layer to wilt overnight to minimize moisture. Wet herbs could cause the oil to grow mold.
- 2). Boil the jar for five minutes to sterilize it and let it dry it thoroughly in the sun or in the oven.
- 3). Tear the fresh herbs by hand and use them to fill the jar at least three-quarters full. For dried herbs, fill the jar until it is about one-third full.
- 4). Pour the oil into the jar until it is full. Lightly stir the contents to remove air pockets, which could cause mold. Place the cap tightly on the oil jar.
- 5). Store the oil jar in a cool place, away from sunlight. Leave it in storage for two to six weeks, shaking the mixture occasionally.
- 6). Strain the oil using a muslin cloth or cheesecloth to remove the herb residue. Pour it into a sterilized oil jar.
