Cilantro and Cotija Corn Butter Recipe



A delicious mix of cilantro, lime and chipotle, with the added saltiness from the Cotija cheese. This is a great addition to any vegetable dish, but works very well on grilled corn on the cob.

Ingredients
  • 1 cup/240 mL unsalted butter, room temperature
  • 1/4 cup/60 mL crumbled Cotija cheese
  • 1/4 cup/60 mL fresh cilantro, finely chopped
  • juice of 1 lime
  • 2 teaspoons/10 mL chipotle chili powder, use less if too spicy
  • 1 teaspoon/5 mL garlic powder

  • Yield: Makes about 1 1/2 cups


Preparation
In medium bowl, combine room temperature butter and lime juice. Once mixed through, add chili powder, garlic powder, and cilantro. Carefully, mix in Cotija cheese. You'll want to maintain the texture of the cheese, so folding carefully is the trick to keep it in tact. Scoop butter mixture onto a large piece of plastic wrap. Form into a long about 2 inches wide, and roll up in plastic. Twist edges to adhere, and place into refrigerator for 1-2 hours before using. To use, simply unwrap plastic and cut into 1/4 inch to 1/2 inch slices.
