Almost Wordless Wednesday: Profiteroles!

Yes, this is an Italian birthday cake: Profiteroles, a concoction also known as "Bongo" in Tuscany.

It's made by filling beignets with crema pasticcera (pastry cream), whipped cream, crema Chantilly (this is what Italians call whipped cream folded into crema pasticcera), or chocolate cream, and for an extra special treat some beignets can be filled with one thing and others another.

In any case, once they are filled they are shaped into a mountain, smothered with chocolate sauce, and everything is dotted with more whipped cream.

Bongo is greeted with joy and goes very fast.
