What"s For Dinner? 30-Minute Menus For 2010 - 1st Edition
Happy New Year to one and all! I hope you had a great start to the new year.
This is the 1st edition of the weekly 30-minute menus for 2010.
These weekly menus are published on a weekly basis; I like to develop the weekly menus on Thursday or Friday, grocery shop on Saturday, and start the week's menus on Sunday.
To help with the budget after the holiday season, I have included a bake once - eat 4 times menu plan.
Don't worry about your family getting tired of 'ham again!' because each menu is quite different from the others so your family will not even notice you are saving money and time by serving ham several times this week.
Ham is so versatile; you can switch the menus to fit your family's favorite dishes such as Ham & Beans, Ham & Cheddar Panini, Chef Salad, and the list goes on.
Our New Year family celebration will be Sunday when I will serve a fully-cooked spiral sliced ham.
I'll also serve Hoppin' John (canned black-eyed peas with diced onion over instant rice) to keep with our New Year's tradition.
We will start with an appetizer course of brie round and mild cheddar wedge; pate; endive, asparagus spears, bell peppers, and melon; artichoke pesto and pomegranate cranberry chutney; whole wheat mini toasts and water crackers; Kalamata gourmet olives.
You will find that I use several cooking methods, mix and match, to get dinner on the table quickly! (The ingredients in parenthesis show some of my quick-prep steps.
) You can always substitute your favorite made-from-scratch recipes when you have more time.
