How to Make Mixed Mushroom Salad With Anchovy Fillets and Fresh Herbs

    • 1). Gently wipe the mushrooms with a damp kitchen cloth to remove dirt and grit. Slice the mushrooms thinly, using a very sharp knife. Place the mushrooms in a large bowl.

    • 2). Mix the olive oil and lemon juice together in a small mixing bowl and pour over the mushrooms. Toss together with two wooden spoons until the mushrooms are completely coated in the olive oil and lemon juice.

    • 3). Finely chop the anchovy fillets and add them to the bowl with the mushrooms. Season the mushrooms with black pepper to taste. Cover and marinate in the refrigerator for 12-15 minutes.

    • 4). Remove the mushroom mixture from the refrigerator and add the chopped fresh marjoram and mint. Let the mixture sit at room temperature, covered, for 20-30 minutes before serving. Add salt to taste immediately before serving.
