How to Grill Boneless Spare Rib
- 1). Mix 1 tbsp. each of paprika, celery salt and onion powder with 1 tsp. each of chili powder, garlic powder, pepper and lemon pepper in a bowl. This creates the dry rub you may apply to the uncooked meat.
- 2). Place the spare ribs on a cookie sheet. Pour a little rub on each of the ribs. With clean hands, rub the spices into the meat. Let the meat stand for at least one hour for the spices to soak into the meat.
- 3). Preheat a gas grill to medium heat. Place the ribs on the hot grill over the heat source. Close the lid to the grill. If using a charcoal grill, add 40 coals to the center of the grill. Add lighter fluid and ignite. Wait for the coals to turn ash white. Use a hand shovel to divide the coals up so there are 20 coals on the left side of the grill and 20 coals on the right side of the grill. Place the meat over the hot coals until cooked.
- 4). Open the lid every five minutes to flip the ribs. Grill on each of the ribs' four sides for five minutes.
- 5). Test the internal temperature of the ribs after 20 minutes using a meat thermometer. The temperature should be 160 degrees Fahrenheit. For a tender spare rib, turn the heat down to warm or low after the meat is cooked and move the ribs off to the side away from the heat source. Leave the boneless ribs on a gas grill with the lid closed for one to two hours. Turn the ribs every 30 minutes. With a charcoal grill, move the meat to the center of the grill away from the hot coals for one to two hours.
- 6). Remove the ribs from the grill and serve hot.
