Ingredients
  • 1/3 cup cocoa powder
  • 2/3 cup water
  • 1 cup semisweet chocolate chips
  • 1/2 cup vegetable oil
  • 1/3 cup butter, melted
  • 1-3/4 cups granulated sugar
  • 1/2 cup brown sugar
  • 1 tablespoon vanilla
  • 4 eggs
  • 1-3/4 cups flour
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 cup semisweet chocolate chips
  • 1/2 cup peanut butter
  • 2 cups semisweet chocolate chips

  • Yield: 24 brownies


Preparation
Spray a 9" x 13" metal pan with nonstick baking spray containing flour and set aside.
In large saucepan, combine cocoa powder and water; bring to a boil over medium heat. Remove from heat and add 1 cup chocolate chips; stir until melted.

Beat in oil, butter, and both types of sugar and stir well. Add vanilla and eggs, beating until combined.

Stir in flour, baking soda, and salt, then fold in 1 cup chocolate chips.

Pour into prepared pan. Bake for 30-35 minutes until the crust looks shiny and brownies are set.

Place brownies on cooling rack.

In small microwave safe bowl, combine 1/2 cup peanut butter and 2 cups chocolate chips. Microwave on high for 1-1/2 minutes; remove and stir. Continue microwaving for 30 second intervals on high, stirring after each interval, until mixture is melted and smooth. Pour over warm brownies and spread to coat. Cool completely before cutting.

If you can't eat peanut butter, substitute 1/3 cup heavy cream in the frosting recipe; microwave as directed.
