Mustard and Panko Crusted Salmon Fillets
This salmon takes just minutes to prepare and bake, and it looks and tastes wonderful. The tangy coating of mustard and the crunchy, buttery panko crumbs make for a perfect topping, and it would make a fabulous dish for an everyday meal or a special occasion.
Serve the salmon with baked potatoes or rice and broccoli or green beans.

Ingredients
- 4 salmon fillets, about 6 to 8 ounces each
- 3 tablespoons whole grain mustard or a gourmet mustard
- 1/3 cup panko crumbs
- 2 tablespoons melted butter
- 1 tablespoon finely chopped fresh parsley
- 1 tablespoon grated Parmesan cheese, optional
- dash salt, or to taste
- dash freshly ground black pepper
- Prep Time: 10 minutes
- Cook Time: 12 minutes
- Total Time: 22 minutes
- Yield: 4 Servings
Preparation
Heat the oven to 300° F.
Arrange the salmon fillets, skin-side down, on a parchment or greased foil lined baking sheet.
Coat the tops of the fillets with mustard, about 2 teaspoons on each fillet.
In a bowl combine the panko crumbs with the melted butter, chopped parsley, Parmesan cheese, if using, and salt and pepper, to taste.
Sprinkle crumb mixture on each fillet.
Bake for 12 to 15 minutes, or just until the salmon is done but still moist.
Serves 4.
