- 1). Mix chickpea flour with other gluten-free flours, such as sorghum or rice flours, for a gluten-free baking mix. Use 1/4 or less of the chickpea flour in the mix due to the strong flavor.
- 2). Add xanthan gum in any chickpea flour recipe to counter the lack of gluten. Gluten in wheat flour makes the baked goods hold together, but it is also the ingredient to which some react. You will only need a small amount of xanthan gum, about a teaspoon per cake recipe, for example. It can be found in health food stores, or the health food section of a grocery store near the alternative flours.
- 3). Use chickpea flour on its own as a thickening for sauces and gravies. It can also be used in a batter for fried foods. Some Middle Eastern recipes call for its use unmixed with other flours as well.
