This humble green is a very potent food that can help the prevention of certain types of cancers.
Some will refer to this vegetable which adheres to our criteria of being easy to find and cheap, as the 'green-leafed super-food.
' I hated spinach as a child, and it was many years later I realized what valuable nutrients I was passing up.
Better late than never! - High in minerals - Can block carcinogens - Good vitamin source - Lowers cholesterol The active substances that make spinach such a potent medicinal are carotenoids and chlorophyll as well as having the ability to help the body metabolize cholesterol safely so it can be eliminated more easily.
The list of additional substances is equally impressive: Factor C0-Q10, which aids in strengthening the heart muscle in particular, potassium, manganese which are both good for brain function and maintaining bone density among other benefits.
Vitamins such as A, B6, C and folate are present also.
It is easy to see why this almost-magical plant is a 'must-include' in any healthy persons diet.
I like to consume this vegetable almost daily, and one of my favorites is the Chinese variety.
It can be steamed or microwaved lightly and served with some flavoring such as garlic, soy or your favorite low-salt seasonings, then served on it's own.
It is a very versatile food, and I have included it in salads, and also in non-meat pasta dishes such as lasagna or even combined in a stir-fry dish.
