- 1). Slice through the stem at ground level to separate the mushroom stem and cap from the underground portion.
- 2). Slice away the outer portion of the bottom stem. This is where dirt and debris are more likely to collect.
- 3). Place the porcinis in a paper bag.
- 4). Refrigerate the porcini mushrooms as soon as possible.
- 5). Wash the porcinis by gently brushing them with a damp pastry brush. Use as soon as possible after harvest.
