How Sweet It Is - Pineapple Upside Down Cake Recipe

Pineapple Upside Down Cake has become a classic dish all over the world. But it is really at home in the Caribbean as pineapples are a new world fruit "discovered" by Columbus in 1493 in Guadalupe.

Here is a recipe for a traditional pineapple upside-down cake that is baked with the pineapple on the bottom and inverted so the bottom becomes the top and shows off the beautiful pineapple rings.

This recipe calls for an 8 x 8 x 2 baking pan. But you can use an appropriate substitute.
