Gjendem Family Potetsalat
One of the great things about belonging to a Scandinavian cultural organization like Daughters of Norway is that you get to meet so many wonderful people who are willing to share their family "heritage" recipes with you. A case in point is this delicious Norwegian potato salad passed on to me from my friend Becky Kruse Gjendem (it's adapted from a recipe handed down to her from her mother-in-law, Marie Gjendem). Unique in that it incorporates apples into the salad, it makes a great accompaniment to entrees like Danish Pork with Crackling or Karelian Hot Pot. Tusen Takk, Becky!
