Lemon Balm Preparation
- 1). Heat 1 qt. of water in a medium pot until it is gently boiling.
- 2). Combine the water and 1 oz. of lemon balm leaves in the mason jar.
- 3). Cover tightly and allow the infusion to sit for at least 30 minutes. Steep for an hour or longer for a stronger effect.
- 4). Uncover the mixture and pour it through the strainer into the bowl.
- 1). Grind 1-1/2 oz. of dried lemon balm leaves into a thick powder.
- 2). Pour the powdered plant material into one glass jar.
- 3). Pour the apple cider vinegar over the powder.
- 4). Screw the lid on the jar tightly and shake the mixture.
- 5). Set the mixture in a cool, dark place for two weeks. Shake the jar once a day.
- 6). Pour the mixture through a piece of cheesecloth into the second glass jar. Allow the filtered product to sit overnight.
- 7). Fit another piece of cheesecloth over the mouth of the first glass jar to filter the mixture once more. This will remove any plant material that has settled out of the infusion overnight.
- 8). Pour the finished product into dark glass bottles and close tightly. Keep the infusion in a cool, dark place.
