Help! I Need A Map To Navigate The Buffet Line!

Have you ever felt anxious when faced with a situation where you are not in complete control? When it comes to your health, you must try to remain in control and exercise as much discipline as possible.
The fact is, the stakes are just too high in this game, and to win it you absolutely have to stick to your guns and do what you have to do to stay on top of your diabetes! No choice in the matter - it's mandatory! The exercise, the diet - strict, to say the least.
Worth it? Oh, you bet! Now, back to my buffet line.
It seemed an imponderable and hopeless situation.
I could not for the life of me tell what foods were on the buffet.
Usually when my husband and I go out to eat, we order off the menu and are very specific with our server about our dietary requirements.
In this case, however, I did not have the luxury to "control" the outcome.
I knew I had to think quick on my feet.
As I edged closer to where the food was, the rather, shall we say, robust gentleman ahead of me left the line to greet some friends who had just entered the banquet hall.
"Ah-ha! Here's my chance to see the food!" And there was so much food to see! I kept thinking I'd spot the fish, or the green beans, or something that looked somewhat healthy to me.
All I could see was something with this sauce, or this gravy, or...
Ah! We don't eat like this! Where's the fish? Where's the veggies? What am I going to do? My guardian angel showed up just before I got ready to pick up a plate.
She's my friend - but for all intense purposes, at that moment, she was my guardian angel! Before the luncheon, she had explained to the person in charge of the banquet that there would be 2 diabetics in attendance (she and I), and we would be eating the chicken breast with rice pilaf and seasonal vegetable.
No gravy, no sauce.
I felt so much better after I heard her say that! It was as if the weight of the world was instantly off of my shoulders! I knew that surely, had I eaten anything from that buffet, the weight of the world would have landed squarely on my hips! We still laugh about that incident every time we get together.
She tells me I "owe her one" - and one day, I'll pay up!
