Ginger and Red Wine Lamb Chops
Ingredients
- 8 lamb loin chops with bone
- 1/3 cup/80 mL chicken stock
- 1/4 cup/60 mL chopped green onions with tops
- 2 tablespoons/30 mL balsamic or red wine vinegar
- 2 tablespoons/30 mL fresh mint, chopped
- 1 tablespoon/15 mL olive oil
- 1 tablespoon/15 mL unsalted butter
- 1 teaspoon/5 mL salt
- 1 teaspoon/5 mL black pepper
- Prep Time: 20 minutes
- Cook Time: 10 minutes
- Total Time: 30 minutes
- Yield: Serves 4
Preparation
Preheat grill. Sprinkle chops with salt and pepper and grill over a medium hot fire until done. About 4 to 5 minutes per side. Meanwhile, in a sauce pan combine olive oil and butter over a medium high heat. Add green onions and sauté for about 2 minutes. Add chicken stock and vinegar. Simmer uncovered for another 2 minutes or until it starts to thicken. Stir in 1 tablespoon of mint.Place chops on serving platter and pour sauce over top.
Garnish with remaining mint.
